Easy Guacamole & Triscuit Crackers

1 green onion, middle green part only 1 ripe, Fresh California Avocado, seeded, peeled and coarsely mashed 1 Tbsp. pico de gallo salsa, excess liquid drained 8 Triscuit® crackers (Original or your favorite variety) 1 orange or yellow mini bell peppers, cut in 8 thin, round slices
  1. For a fun garnish make green onion curls. Put 1 cup ice and cold water into to a medium bowl. With a sharp paring knife cut green onion into lengths of about 3 inches, then slice lengthwise into very thin strips. Place in the ice water and set aside until the strips curl, then drain. OR simply mince the green onion and set aside.
  2. Make the easy guacamole by gently folding the salsa into the mashed avocado.
  3. Top each cracker with guacamole, then one slice of pepper and a couple of green onion curls or sprinkle of minced green onion. Serve immediately.

Serving Suggestions: For those who like more heat, substitute jalapeño, serrano or habanero peppers for the mini bell peppers. Also try topping with chopped cilantro, sliced olives, pickled red onions or marinated carrots.

Beverage Pairing: Goes great with sparkling water for snack time or margaritas for happy hour!

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
