It’s no wonder why Cinco de Mayo is one of the top avocado consumption events of the year. With folks hitting the market for fresh California Avocados and other in-season produce, the possibilities to create something unique and delicious are endless.

Thats why I wanted to post a little shout out to our awesome Instagram friends who tag us in their California Avocado recipe creations. With California Avocados now in season, and in great supply heading into Cinco de Mayo, I thought it would be a fun way to celebrate not only the holiday, and all of you as well.

Cinco de Mayo wouldn’t be complete without guacamole, so no matter what you do, make sure to pick up a few extra avocados and other ingredients to make some guacamole for your friends and family. They’ll love you for it.

If you’re a meat lover, this one is for you. California Avocados go great with steak but if you add ghost peppers and lime to the picture, you can only imagine the decadence.

Shawn posts such amazing looking food, and this is no exception. A tostada smeared with black beans, then topped with Avocado Salsa, fresh tomatoes, cilantro and an over easy egg… Cinco de Mayo just expanded into breakfast time!

Naked = no tortilla. This delicious looking de-constructed taco reminds me a lot of a taco salad minus the lettuce, but would be easy to execute if serving tacos for your Cinco de Mayo gathering. Just gather all ingredients into a bowl and serve!

I feel like nachos are overlooked a lot of times but, similar to the above naked taco, these would be easy to execute if you already have 1) guacamole 2) taco ingredients. Just gather your chips on a plate and go wild with the toppings!

Speaking of tacos, who says you need tortillas? These taco lettuce wraps are easy and fit into so many whole food and lean diets. When designing that taco bar, make sure you pick up some lettuce for wraps while you’re at it!

This steak salad looks pretty fantastic. As someone who needs some substance in a salad for it to be considered a meal, this is right up my alley. Topped with Cilantro Avocado Dressing, this recipe is done in just 15 minutes.

Consider swapping that shrimp cocktail for something more lively – like a quinoa bowl! The addition of avocado, shrimp, jalapeños and red onions make this just the appetizer (or main dish) your guests will be craving. Serve with a side of lime and call it a success!
