3 gal. shredded iceberg lettuce 3 cups ranch dressing 1 gal. diced tomato 4 1/2 lb. cooked turkey, diced 12 California Avocados (6 lbs.) 48 slices crisply cooked bacon 48 toast points
  1. Per order – toss 2 cups lettuce with 1 tablespoon dressing.
  2. Arrange in a bed on a serving plate.
  3. Arrange 1/2 cup tomato over lettuce, leaving a border of lettuce.
  4. Repeat sequence with 2/3 cup turkey and 1/2 avocado, diced.
  5. Drizzle with 1 tablespoon dressing.
  6. Top with 2 slices bacon.
  7. Garnish with toast points.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
