This simple salad is prepared in minutes and is delicious on its own or as the base of a dinner salad.

4 cups mache or other baby lettuces 1 ripe, Fresh California Avocado, seeded, peeled and cut in quarters 4 oz. Brie cheese As needed Red wine vinaigrette dressing to taste
  1. Place lettuce on salad plates and add one quarter of a Fresh California Avocado to each plate.
  2. With rind still on, cut Brie cheese into wedges of about 1 oz. each. Put on a microwave-safe plate and cook in microwave on high power for 5 to 15 seconds, or until cheese is warm and just starting to melt. Do not overcook.
  3. Add warm Brie wedges to each salad plate, drizzle all with dressing and serve.

Serving Suggestions:
For a main-meal salad, double the ingredient quantities and top the salad with grilled chicken breasts, fish or shrimp.

Beverage Pairings:
Try with a glass of sweet Sherry or Merlot.
