Roasted Unagi with California Avocado Sushi

As needed California Avocado Sushi Rice (recipe follows) 4 oz. unagi 1 Tbsp. prepared teriyaki sauce 1 tsp. toasted sesame seeds 1 tsp. chives, chopped 1/3 cup shaved bonito flakes California Avocado Sushi Rice (Yield: 3/4 cup) 1/2 cup prepared sushi rice 1/4 Fresh California Avocado*, coarsely chopped 1 1/2 Tbsp. mayonnaise As needed Prepared wasabi paste, to taste

California Avocado Sushi Rice:

  1. Combine sushi rice, avocado, and mayonnaise in a bowl. Add wasabi paste to taste.

To Assemble:

  1. Form the California Avocado Sushi Rice into a rectangular shape on a plate, roughly the size of the unagi.
  2. Heat a grill to medium high heat. Grill unagi for 1 minute on each side. Remove from heat.
  3. Glaze unagi with teriyaki sauce, then garnish with sesame seeds and chives. Lay unagi over the rice. Garnish with shaved bonito. Serve.

*A large Fresh California Avocado weighs about 8 oz.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
