Avocado Blueberry Pops

Ingredients

2 ripe, Fresh California Avocado seeded and peeled
1 (13.5 oz) can reduced fat coconut milk
3 Tbsp. agave
1 medium lemon juice only
1/8 tsp. salt or to taste
1/2 cup fresh or frozen blueberries*
10 popsicle sticks

Topping

1/4 cup semi-sweet chocolate on top of the pops
2 Tbsp. crushed pistachios (or preferred nuts) - optional

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
