Buffalo Style Avocado Toast

Ingredients

4 slices bread (your favorite type)
1/8 tsp. olive oil or to taste
2 ripe, Fresh California Avocados seeded, peeled and mashed
1 1/2 cups shredded or diced chicken
1/2 cup crumbled blue cheese
2 stalks celery diced
2 small carrots diced or cut into rounds
1/2 tsp. hot sauce (your favorite) to taste
1 scallion thinly sliced for garnish
1/8 tsp. flaked sea salt to taste
1/8 tsp. red pepper flakes to taste, optional

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
