1 ripe, Fresh California Avocado peeled and seeded
2 1/4 cups cashews
3/4 cup coconut cream (not cream of coconut)
1/2 cup agave nectar
10 tsp. lime juice
1 tsp. vanilla extract
2 tsp. pitaya powder

Crust

As needed Cupcake liners

Crust Ingredients:

24 vegan gingersnap cookies
4 Tbsp. coconut oil
