1 batch California Avocado & Buttermilk Waffles (recipe below)
1 ripe, Fresh California Avocado, seeded, peeled and sliced
1 large orange, peeled and cut into 16 segments

California Avocado & Buttermilk Waffles

2 large eggs, yolk and white separated
2 Tbsp. granulated sugar
1 cup all purpose flour
1/3 cup cornstarch
3/4 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
1/2 each ripe, Fresh California Avocado
1 1/8 cups buttermilk
1/4 tsp. vanilla extract
As needed vegetable oil

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
