California Avocado and Heirloom Tomato Tartare

1 cup canola oil
3/4 cup wild rice


2 ripe, Fresh California Avocado halved and seeded
1 lb. applewood chips soaked
1/2 cup honey
4 tomatoes heirloom, sliced lengthwise
1/2 cup soy sauce
1/2 cup ponzu sauce
1 Tbsp. lemon juice

Cilantro Cream

Cilantro Cream Ingredients:

1/2 cup orange juice
1 clove garlic minced
1/2 serrano chile destemmed
1/4 cup cilantro chopped
1/2 cup heavy cream



*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
