1/2 cup tomatoes finely diced
1/3 cup cilantro chopped
1/3 cup white onion chopped
1 Tbsp. lime juice
3/4 lb. chicken breasts
2 Tbsp. extra virgin olive oil
1/8 tsp. Kosher salt or to taste
As needed Freshly ground black pepper, to taste
2 flour tortillas extra-large
2 cups shredded Cheddar cheese
1 head green leaf lettuce shredded
1 As needed ripe, Fresh California Avocado peeled, seeded and sliced
