California Avocado Danish

5 Fresh California Avocados**
2 lb. prepared Danish dough
4 1/2 oz. milk
1/2 tsp. vanilla extract
2 egg yolks
2 Tbsp. sugar
1 Tbsp. cornstarch
1 Tbsp. butter
1 Tbsp. fresh lime juice
4 oz. apricot glaze (recipe follows)
Egg wash of 1 egg mixed with 1 Tbsp. water

Apricot Glaze (Yield: 1/2 cup)

4 oz. apricot jam or preserves
1 Tbsp. water

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
