California Avocado Egg Bites

Ingredients

3 large Hatch chiles*
1 1/2 cups spinach
3 eggs
1/3 cup cottage cheese
1/3 cup shredded cheese
1 Tbsp. cilantro optional
1 scallion diced
1/4 tsp. salt
1/4 tsp. pepper
1 ripe but firm, fresh California Avocado quartered, seeded, peeled and cut into small chunks
Cooking spray

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
