Ingredients

12 (1"-thick) slices country bread
12 ripe, Fresh California Avocados peeled and seeded*
6 limes
Pickled Fresno Chilis (recipe follows)
1/2 cup toasted pistachios coarsely chopped
12 eggs
24 sprigs cilantro
3/4 cup extra virgin olive oil
3/4 cup clarified butter
Sea salt to taste

Pickled Fresno Chilis
(Yield: 1 ½ cups)

8 oz. Fresno chilis
3/4 cup red wine vinegar
3/4 cup water
1 1/2 tsp. sea salt
1 1/2 tsp. sugar

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
