California Avocado Mousse

3 Fresh California Avocados, peeled, pitted
8 oz. warm water
4 oz. hot water
3 sheets gelatin
2 tsp. salt
1 1/2 tsp. Piment d'espelette
1 tsp. lemon juice

Shrimp (or serving suggestion)

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
