California Avocado – Pineapple Relish for Grilled Meat, Poultry or Fish

1/3 cup lemon juice
4 California Avocados, cut in 1/4-inch dice
12 oz. pineapple, cut in 1/4-inch dice
6 oz. finely chopped onion
1/4 cup chopped, fresh mint
1 tsp. salt
1/4 tsp. crushed red pepper (optional)

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
