California Avocado Shrimp and Citrus Salad

Serves: 12
lb.  shrimp, cooked, shelled and deveined
  grapefruit, peeled and sectioned
  navel oranges, peeled and sectioned
  or 3 small red onions, thinly sliced
  heads leaf lettuce
  California Avocados, seeded, peeled and cut into 8 slices
  As needed  Celery seed dressing (recipe follows)
    Celery Seed Dressing (Yield: 3 Cups)
1/4  cup  sugar
tsp.  dry mustard
tsp.  salt
Tbsp.  onion, minced
3/4  cup  white vinegar
cups  oil
Tbsp.  celery seed

As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados


  1. In large bowl, combine shrimp, grapefruit, oranges and red onion. Set aside.
  2. Arrange lettuce on individual serving plates.
  3. Spoon shrimp salad mixture onto lettuce.
  4. Just before serving, slice avocados and arrange on salad plate.
  5. Generously drizzle dressing on each salad before serving.
  6. Dressing Preparation
  7. Add first four ingredients to blender or small mixing bowl.
  8. Slowly add part of vinegar, blend or mixing at medium speed.
  9. Add the rest of vinegar and oil, beating until creamy.
  10. Add celery seed.
