California Avocado Strata with Monterey Pepper Cheese

Ingredients

4 oz. French bread, cut into 1-inch pieces
1 ripe, Fresh California Avocado, peeled, seeded and cut into chunks
3 Eggs
1 1/3 cups 2% milk
2 tsp. Dijon mustard
1/8 tsp. cayenne pepper
1/8 tsp. salt
1/8 tsp. ground black pepper
1 cup grated Monterey Jack cheese with hot peppers
2 medium green onions, chopped, white part only
1 small Roma tomato, diced

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
