4 oz. Heavy Cream
1/4 vanilla bean
2 Tbsp. sugar

California Avocado Mousse (Yield: 2 cups)

2 large Fresh California Avocado*
2 sheets Gelatin, bloomed or 1 tsp. Powdered gelatin bloomed in 1 Tbsp. water
5 oz. Sweetened condensed milk
1/4 oz. fresh lime juice
2 oz. Heavy Cream

Coconut Macaroon (Yield: 1 cup)

2 1/2 oz. shredded coconut
1 1/4 oz. Sweetened condensed milk
1 oz. egg white
1/2 oz. sugar
As needed Pinch of salt

Coconut Mousse (Yield: 1-1/4 cups)

4 oz. coconut milk
2 oz. Heavy Cream
1 1/2 oz. Sweetened condensed milk
2 sheets Gelatin, bloomed or 1 tsp. Powdered gelatin bloomed in 1 Tbsp. water
6 vanilla wafer cookies (approx.

1 pt. milk
2 oz. Sweetened condensed milk
1/4 vanilla bean
4 oz. Fresh California Avocado, finely diced
3 oz. ice

Candied California Avocado Chips (Yield: 2 oz./approx. 16 chips)

4 oz. Fresh California Avocado, sliced thin (1/8" thick)
1 3/4 oz. egg white (1 egg white)
3 1/2 oz. granulated sugar
1 tsp. fresh lime juice
