California Chicken Avocado Citrus Salad Wrap

Ingredients


Dressing (Yield 2/3 cup – approx.)

1/4 cup lime juice
1/4 cup Extra virgin olive oil
2 Tbsp. red onion, minced
1 tsp. Dijon mustard
1 Tbsp. honey
1 tsp. cumin
As needed Salt to taste

Wrap

2 cups rotisserie chicken, meat removed from the bone and sliced (using primarily the breast meat)
1 large orange, peeled and cut into bite-sized pieces
1 cup cherry tomatoes, halved
1/4 cup chopped, fresh cilantro
4 cups thickly chopped romaine lettuce
1 ripe, Fresh California Avocado, seeded, peeled and sliced
4 burrito-sized whole wheat low-sodium tortillas

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
