Chocolate & California Avocado Cupcakes with Candied Cream Cheese Frosting

Ingredients

1 1/2 cups sugar
1/4 cup canola oil
2 Eggs
2 tsp. vanilla extract
1 cup unsweetened cocoa powder
1/2 cup brewed coffee, cold
1 ripe, Fresh California Avocado, peeled, seeded and diced small
1 cup all purpose flour
1 tsp. baking soda
1/4 cup softened butter
1 cup buttermilk
1 tsp. salt

Frosting

6 Tbsp. powdered, hard-shelled candy pieces (from 2 Tbsp. of 3 different colors; purple, red, & orange)
4 8oz. packages of cream cheese, divided
6 Tbsp. softened butter, divided
1/4 cup sugar
2 ripe, Fresh California Avocado, peeled and seeded

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
