Crispy Avocado Egg Rolls Ingredients:

1 1/2 cups vegetable oil
3 ripe, Fresh California Avocados seeded, peeled and diced
1/4 cup minced red onion
1/4 cup sun-dried tomatoes drained and diced
1/4 cup fire-roasted corn kernels drained
2 Tbsp. chopped cilantro
1/4 tsp. salt
10 egg roll wrappers
1 large egg beaten
1 cup Avocado Ranch (see make-ahead recipe below)

Avocado Ranch Ingredients:

1/2 ripe, Fresh California Avocado seeded and peeled
1/2 cup ranch dressing

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
