Cuban Salad

2 large or 4 small tomatoes

1/2 small red onion thinly sliced
2 ripe, Fresh California Avocados seeded, peeled and sliced
1/2 cup red wine vinaigrette or Mojo Dressing (see make-ahead recipe below)

Mojo Dressing

1/3 cup bitter orange juice (if not available use regular orange juice plus 1 Tbsp. lime juice)
1/4 cup extra virgin olive oil
2 cloves garlic minced
1/4 tsp. sea salt
1/2 tsp. black pepper
1/2 tsp. crushed oregano

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
