Double Avocado Veggie Burgers

1 large red pepper stemmed and seeded and cut in 4 large slabs
Olive oil cooking spray
1/4 tsp. sea salt divided
4 fresh or frozen veggie burger patties
4 (1-oz.) vegan cheese slices (optional)
8 slices sourdough bread
2 ripe, Fresh California Avocados seeded, peeled and sliced
1 cup fresh baby arugula

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
