Double Smashed Avocado Burgers with Hatch Chile Queso:

8 (4 oz.) ground beef burger patties
1 1/2 tsp. burger seasoning
4 brioche or multigrain burger buns
California Avocado Hatch Chile Queso (make ahead)
California Avocado Smash (make ahead)

California Avocado Smash:

1 ripe, Fresh California Avocado, seeded, peeled and quartered
1/2 tsp. burger seasoning
1 Tbsp. lime juice, optional

California Avocado Hatch Chile Queso:

1 oz. olive oil
2 roasted Hatch chiles* (mild or hot), stemmed, seeded and diced
12 oz. white queso sauce
1 ripe, Fresh California Avocado, seeded, peeled and diced

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
