Easy California Eggs Benedict

Ingredients

2 English muffins split
4 slices Canadian bacon (1-oz. each), warmed
4 eggs poached
1 ripe, Fresh California Avocado peeled, seeded and sliced
1 vine-ripened tomato large, cut into 8 thin slices
1/2 cup prepared Hollandaise sauce warmed

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
