Frittata with Avocado, Roasted Peppers, Olives and Feta

Ingredients

1/3 cup chopped onions
1 tsp. olive oil
6 large eggs
1/2 cup milk
1/2 tsp. dried oregano
1 1/2 ripe Fresh California Avocados, peeled and seeded
1/2 Tbsp. lemon juice
3/4 cup feta cheese, crumbled
1/3 cup Kalamata olives, coarsely chopped
1/3 cup coarsely chopped roasted red bell pepper

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
