Gluten Free Zucado Bread

Ingredients

1 1/2 cups gluten free all-purpose baking flour
2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 tsp. xanthan gum
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1 ripe, Fresh California Avocado, peeled, pitted, and mashed
3/4 cup sugar
2 Eggs
1 1/2 tsp. vanilla extract
1 1/2 cups zucchini, finely grated

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
