Mango Avocado Tartar
|1/2||Mango - peeled, seeded and diced|
|1/4||Red bell pepper - peeled and diced|
|1/2||California avocado - peeled and diced|
|1/4||Red onion - diced|
|1/8||English cucumber - seeded and diced|
|2||Tbsp.||Extra virgin olive oil|
|As needed||Salt and white pepper to taste|
As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados
- Mix all ingredients together.
- Season and reserve in the refrigerator until service.
- Serve with Chilled Yellow Pepper Cilantro Soup.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
