Mango Avocado Tartar

1/2    Mango - peeled, seeded and diced
1/4    Red bell pepper - peeled and diced
1/2    California avocado - peeled and diced
1/4    Red onion - diced
1/8    English cucumber - seeded and diced
Tbsp.  Extra virgin olive oil
  As needed  Salt and white pepper to taste

As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados


  1. Mix all ingredients together.
  2. Season and reserve in the refrigerator until service.
  3. Serve with Chilled Yellow Pepper Cilantro Soup.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
