No Churn Avocado Pistachio Ice Cream

1 ripe, Fresh California Avocado seeded and peeled
14 oz. sweetened condensed milk (1 can)
3 2/5 oz. instant pistachio pudding mix (1 package)
2 Tbsp. lemon juice
2 cups heavy whipping cream
1/2 cup pistachios shelled and salted, roughly chopped

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
