Quick Pickled California Avocados

1 1/2 cups unseasoned rice wine vinegar
1/2 cup water
1/2 cup sugar
2 Tbsp. kosher salt
2 shallots thinly sliced
2 Fresno chiles thinly sliced
2 cloves garlic smashed and peeled
2 slightly underripe California Avocados peeled, seeded and sliced

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
