Smoked Salmon Cucumber Avocado Rolls

8 oz. thinly sliced cold smoked salmon
4 oz. cream cheese room temperature
1 Tbsp. thinly sliced chives plus extra chives for garnish
1 ripe, Fresh California Avocado seeded, peeled and sliced into thin strips
2 tsp. fresh lemon juice
1 English cucumber cut into 4 thin strips (with the middle seeds removed) and the remaining cut into 12 ⅓ inch thick rounds
2 Tbsp. everything bagel seasoning blend

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
