SoCal Ceviche

Ingredients

1 lb. fresh or frozen uncooked medium shrimp, tails removed, deveined and cut in half (thawed if frozen)
2 serrano chles, stemmed, seeded and minced
1 cucumber, seeded and minced
1/2 medium red onion, peeled and cut in 1/4 in. dice, divided
2/3 cup fresh lime juice
1/2 cup orange juice
1/3 cup lemon juice, optional
1/2 cup minced cilantro, optional, or to taste
1 tsp. seasoned salt, or to taste
2 ripe, Fresh California Avocados, seeded, peeled and cut in 1/4 in. dice

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
