St. Patrick’s Day Guacamole

Serves: 6

Ingredients

3 California Avocados
Juice from 1/2 lemon
1/2 cup carrots, very finely diced
1/4 cup red onion very finely diced
1/4 jalapeño seeded and very finely diced (optional)
1 clove of garlic, crushed
3 slices cooked bacon chopped
1/4 cup very finely chopped parsley
2 oz. Irish cheddar, crumbled
heavy pinch of salt
heavy pinch of fresh ground black pepper

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
