2 ripe, Fresh California Avocado, seeded, peeled and cubed
1/4 cup red onion minced
2 Tbsp. cilantro minced
1/2 jalapeno stemmed and minced
1 Tbsp. fresh lime juice
1/4 tsp. kosher salt or to taste

Corn Dip

2 cups corn fresh or canned
1/3 cup mayonnaise
1 Tbsp. melted butter
2 Tbsp. red onion finely diced
2 Tbsp. cilantro chopped
1 lime squeezed
1/3 cup crumbled cotija cheese

chili powder

1 lb. boneless chicken thighs
2 Tbsp. taco seasoning
1 lime juiced

1/2 cup red onion finely diced
1/4 cup radishes thinly sliced
1/2 cup cilantro chopped
1/2 cup tomato diced
1/2 cup crumbled cotija cheese
1 cup chopped romaine lettuce
