Tofu-Vegetables & Avocado Breakfast Scramble

1 Tbsp. olive oil
3/4 cup yellow onion diced
2 cloves garlic minced
3 baby Bella (cremini) mushrooms stems removed and sliced
1 cup red bell pepper diced
1/4 tsp. turmeric
1/8 tsp. black pepper
14 oz. organic tofu (1 package), extra firm*
1 cup kale leaves chopped
1/4 tsp. sea salt
1 ripe, Fresh California Avocado peeled and seeded

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
