Vanilla Avocado Cupcakes

Ingredients

1/2 cup pureed Fresh California Avocado
3/4 cup granulated sugar
2 large eggs
2 tsp. vanilla
1 1/2 cups all-purpose flour
1/2 tsp. salt
1 1/2 tsp. baking powder
1/2 cup low fat buttermilk
Easy Cream Cheese Frosting (see recipe below)
Green sprinkles or other cake decorations, optional

Easy Cream Cheese Frosting

4 oz. cream cheese softened
1 Tbsp. low fat milk or buttermilk or more as needed
1 cup powdered sugar

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
