Cheese Grits with California Avocado

Delectable cheesy grits topped with creamy California Avocado cubes.

Serves: 4

2 cups water 1/2 tsp. salt 1/2 cup stone-ground grits 2 Tbsp. butter 1/2 cup shredded Cheddar cheese 1 ripe, Fresh California Avocado peeled, seeded and cut into ½” cubes
  1. In a saucepan, combine water and salt; bring to a boil over medium-high heat.
  2. Add grits, stirring to combine. Reduce heat to low. Cook, stirring frequently, for 25 to 30 minutes, or until grits are thickened and creamy.
  3. Remove grits from heat and let stand for 5 minutes.
  4. Add butter and cheese
  5. Top with avocado cubes

Serving Suggestion: Top with sautéed or BBQ shrimp or mixed veggies for a dinner entrée.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
