Fresh California Avocado and sliced tomatoes are the perfect accompaniments on this open-faced egg sandwich layered on whole grain toast. The avocado and tomato together act as a nutrient booster by enabling the body to absorb more fat-soluble nutrients, such as alpha- and beta-carotene as well as lutein, in foods that are eaten with the fruit. This powerhouse is an excellent source of protein, vitamins A, C, D and k, along with iron and dietary fiber. 1 slice whole grain bread, toasted 2 eggs, cooked over-easy 1/4 cup sliced tomatoes (any type) 1/2 As needed ripe, Fresh California Avocados**, peeled, seeded and sliced 1/8 tsp. Salt and pepper
  1. Layer 1 slice of toast with 2 cooked eggs, sliced tomatoes and avocado.
  2. Season with salt and pepper.

Serving Suggestion: Try also with a dish of fresh salsa to dip the sandwich in.

Beverage Pairing: Fresh-squeezed grapefruit juice.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
