1 | large purple onion, chopped | |
2 | cloves garlic, chopped | |
2 | Tbsp. | balsamic vinegar |
1 | Tbsp. | olive oil |
4 | ripe, Fresh California Avocados* | |
1 | Tbsp. | lemon juice |
1/2 | tsp. | salt |
1/2 | tsp. | dried Italian seasoning |

Instructions
- Toss together first 4 ingredients
- Place in an aluminum foil-lined baking pan.
- Bake in a 425 degree F oven for 25 to 30 minutes or until lightly browned, stirring once.
- Cool.
- Seed, peel and mash avocados in a medium bowl.
- Stir in onion mixture, lemon juice, salt, and Italian seasoning.
- Chill 1 hour.
