Avocado roses look stunning on charcuterie boards, salads, avocado toast and more. While it might seem challenging to create an avocado rose, it’s actually easy when you follow these tips and five simple steps. Before getting started, we recommend brushing up on how to cut an avocado.

During California Avocado season, which is usually from spring through summer, look for California on the avocado label. That way you’ll know you are choosing an avocado that has been grown close to home and therefore has not had to be transported a long distance.

WHAT’S NEEDED

  • A firm-ripe avocado works best…if the avocado is fully ripe it is harder to make the thin slices needed for the rose, and if it is underripe the slices may be too firm to curl into the rose shape. Need help with ripening? Here are our tips for ripening avocados
  • A sharp paring knife or chef’s knife, do not use a knife with a serrated edge
  • A very smooth, food-safe cutting surface like a marble cutting board (some people like to lightly oil the surface to reduce friction when forming the avocado rose)
  • A little bowl with lemon juice, neutral-tasting cooking oil or water
  • Clean hands

HOW TO MAKE AN AVOCADO ROSE

  1. Cut a firm-ripe California Avocado half. Wash the avocado. Remove any remnants of the avocado stem (or avocado “button” as we call it) if present, and place the avocado on the cutting surface. Insert the knife, horizontally, in the middle of the thinner neck part of the avocado and cut through until you reach the seed. Rotate the avocado around the knife to cut it in half. Select the half without the seed. If making more than one avocado rose, carefully remove the avocado seed using a spoon. For safety, do not hold the avocado in your hand or “whack” the seed using a knife

  2. Peel the avocado half. With the knife make a small nick in the center of the avocado peel at the neck end of the avocado. Using your fingers, gently peel the skin away from the fruit starting from the place where you made the nick. It may come off in a single peel or in multiple pieces. Place the peeled avocado half cut-side-down on the cutting surface. If there are any nicks, discolorations or rough parts on the avocado half, gently scrape them off with your knife. Dip your fingers into the lemon juice (or oil or water) and use them to smooth the surface of the avocado. Wash your hands before the next step

  3. Slice the avocado very thinly. Make thin slices across the avocado, spacing them as evenly as possible. For more, shorter “petals,” cut the avocado half widthwise as shown. For fewer, longer “petals” cut the avocado lengthwise.

  4. Fan out the avocado slices. Using both hands, gently fan out the avocado slices with their sides touching. Start with the slices in a straight line, then gently extend the line, bending each side into a horseshoe shape

  5. Roll the avocado slices into a rose. Beginning at one end, gently roll up the slices into a spiral rose shape. If desired, pull, push or slightly flatten the avocado “petals” to accentuate the rose look
