Pasta, Salmon, California Avocado, Cauliflower and Olives

Ingredients

Serves: 12
1 1/2  lb.  angel hair pasta, cooked al dente and drained
  As needed  White sauce (recipe follows)
lb.  salmon, cooked, boned and cut into bite size pieces
lb.  cauliflower, cut into flowerets and steamed
cup  ripe olives, sliced
  California avocados, seeded, peeled and diced
1/3  cup  fresh lemon juice
1/2  cup  fresh dill, finely chopped
    White Sauce (Yield: 4 cups)
cup  dry white wine
Tbsp.  shallots, finely minced
cups  unsalted butter, cut into slices
cup  Whipping cream
Tbsp.  Dijon mustard
tsp.  salt
1/2  tsp.  pepper
