2015 All American Recipe Contest Winner – Beverage Category

A light refreshing adult beverage best described as a cross between a blended cocktail and a smoothie, The Palm Tree uses fresh ingredients such as California Avocado, freshly squeezed lime juice, granny smith apple, and pineapple juice. Coconut rum adds the right amount flavor to give this drink "cocktail status".

A beautiful palm tree garnishes the cocktail, simply made from apple slices, a pineapple wedge, and green maraschino cherries.

Ingredients

Serves: 1
1/2    ripe, Fresh California Avocado
1/2    lime, juiced
1/2    Granny Smith apple, half chopped, half sliced
Tbsp.  brown sugar, divided
oz.  fresh pineapple juice
oz.  coconut rum
cup  crushed Ice, divided
oz.  carbonated water
  Lime wedge
  Pineapple wedge
  green maraschino cherries
  Mint Sprig
  toothpicks
16  oz.  glass or mason jar

Instructions

  1. Prepare glass: Run a lime wedge along the rim of a 16-oz.oz. glass. Turn the glass upside down and dip into a bowl filled with half of the brown sugar; coat the rim. With glass right side up, pour in half of the crushed ice. Set aside.
  2. Drink instructions: In a blender, combine avocado, lime juice, chopped apple, remaining brown sugar, pineapple juice, rum and remaining crushed ice. Blend until smooth. Pour mixture into reserved sugar-rimmed z glass. Top with carbonated water.
  3. Garnish instructions: cut a small wedge on the outside of pineapple, length-wise. Slice 6 thin slices from ¼ of the green apple. Using two toothpicks, attach the apple slices to the top of the pineapple wedge. Place one green maraschino cherry in front and one in back to cover the toothpicks. Insert two remaining toothpicks about halfway down pineapple wedge on each side to help hold the palm tree garnish in place on glass. Place the palm tree garnish inside the glass and add a mint sprig to hide the toothpicks next to pineapple wedge. Serve immediately. Enjoy!

* Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
