This air-fried ravioli recipe combines three delicious ingredients into one perfect appetizer: ripe, California Avocados, lots of cheese, and pasta! Sheets of lasagna dough get filled with a flavor-packed filling of California Avocado, three kinds of cheese, garlic, and red pepper flakes, cut into little ravioli, and baked in the air fryer in just 8 minutes. They are served with a California Avocado dipping sauce, too!

1/2 ripe, Fresh California Avocado, seeded and peeled 1/4 cup ricotta cheese 1/4 cup parmesan cheese 4 cloves roasted garlic (we can add how to roast in air fryer if desired) 2 tsp. lemon juice 1/2 tsp. kosher salt 1/4 tsp. freshly ground pepper 1/4 tsp. red pepper flakes 2 Tbsp. flour 12 oz. package fresh lasagna sheets 1 egg, well beaten 2 Tbsp. olive oil OR olive oil spray - enough to spray the bottom of the pan 1 tsp. kosher salt, to taste California Avocado Dipping Sauce (see make-ahead recipe below) California Avocado Dipping Sauce 1/2 ripe, Fresh California Avocados, seeded and peeled 1 cup packed basil leaves 1 Tbsp. lemon juice 1 tsp. lemon zest 1 clove garlic, smashed 1/2 tsp. kosher salt 1/4 tsp. red pepper flakes
  1. In a food processor, add avocado, cheeses, roasted garlic, lemon juice, salt, pepper, and red pepper flakes. Process on low until well combined and smooth, 1-2 minutes. Transfer mixture to a piping bag or zip top bag and set aside.
  2. Lightly flour a work surface and place 2-3 sheets of lasagna on it. Use a rolling pin to thin the dough to a 1/8-inch thickness. Work in batches if needed, and keep dough covered with a clean, damp kitchen towel or damp paper towels when not rolling.
  3. To make ravioli, place a sheet of dough on your work surface so that a long side is closest to you. Use a pastry brush to brush beaten egg (egg wash) along 4 edges of a dough sheet. Next, brush a line of egg wash across the center of the dough long ways. Finally, brush 5 vertical lines of egg wash evenly across the sheet, to form a grid pattern of egg wash.
  4. Cut a ½-inch wide opening in piping bag of filling, and pipe 1 tablespoon of filling into the bottom squares of egg wash. Fold the sheet in half by grabbing the long side farthest from you and folding it over the filled side nearest you. Press the dough together well along the egg wash grid, which will be around each dollop of filling. Use a pizza cutter or bench scraper to make 5 vertical cuts through the dough between the filling to form 6 raviolis. Place on a parchment-lined sheet tray, cover with a clean, damp kitchen towel, and repeat with remaining dough and filling until all filling has been used.
  5. Spray air fryer basket with olive oil spray. Place a single layer of ravioli inside, then spray tops with more olive oil spray. Sprinkle with kosher salt, then bake at 350 F for 8-10 minutes, or until ravioli are crispy and golden. Repeat with remaining ravioli until all are air fried.
  6. Serve warm with California Avocado Dipping Sauce on the side.

California Avocado Dipping Sauce

  1. Add all sauce ingredients into a food processor bowl and pulse until well combined, then process on high until smooth. Taste and adjust seasoning if needed, then transfer to a bowl for dipping. Set aside.

Serving Suggestion: You also can serve as an entrée with a seasonal vegetable on the side. I recommend broccolini with lemon and garlic, or a simple arugula salad.

Beverage Pairing: Plain San Pellegrino, or blackberry/cherry seltzer

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
