Caesar salad dressing takes on a new dairy-free twist with fresh California Avocados, capers and garlic.

1 ripe, Fresh California Avocado, seeded and peeled 6 Tbsp. olive oil 2 Tbsp. lemon juice 2 cloves garlic 1 Tbsp. capers with brine 1 tsp. Dijon mustard 1/2 tsp. salt Water, as needed, for texture
  1. Combine ingredients in a blender or food processor and blend until smooth.
  2. Add water or more lemon juice to reach desired texture.
