California Avocado Fries & 4 Dipping Sauces

Ingredients
Avocado Fries 2 cups vegetable oil, for frying (could need more depending on size of pan) 2 ripe, Fresh California Avocados, halved, seeded and peeled 1 cup flour 2 tsp. sea salt 4 eggs, whisked 2 cups panko bread crumbs 1 Tbsp. sea salt 1/8 tsp. sea salt, or to taste California Cilantro Sauce 1 ripe, Fresh California Avocado, seeded and peeled 1/2 bunch cilantro, large stems removed 1 lime, juiced 1/2 tsp. sea salt 1/2 cup water California Avocado Ranch 1 ripe, Fresh California Avocado, seeded and peeled 1/4 cup Greek yogurt 1 lemon, juice only 1 Tbsp. milk 1 tsp. dried parsley 1 tsp. onion powder 1/2 tsp. garlic powder 1/2 tsp. dried dill 1 tsp. sea salt 1/4 tsp. pepper 1 Tbsp. chopped chives Sun-Dried Tomato Aioli 1 cup mayonnaise 1/3 cup sun-dried tomatoes 1 tsp. salt 1 lemon, zested Honey Garlic Sauce 1 Tbsp. butter 3 cloves garlic, minced 1/2 cup soy sauce 1/3 cup honey 1 Tbsp. rice vinegar 2 tsp. cornstarch 1 Tbsp. water Sesame seeds, for garnishInstructions
- Heat at least 2 inches of vegetable oil to 375 degrees F/190 degrees C in a large saucepan or Dutch oven.
- Cut avocados into ½-inch thick slices. .
- Place flour in one bowl and mix in 2 teaspoons of salt. Place whisked eggs in a second bowl. Place panko in a third bowl and mix in the tablespoon of salt.
- Dredge each avocado piece in the flour, shaking off the excess. Then dip them in the eggs, coating each piece entirely. Then coat each piece in panko.
- Fry the avocado slices (a few at a time) for 30–60 seconds or until the bread crumbs become lightly golden.
- Remove from oil and place on paper towels to remove excess oil. Season with salt while hot.
- Serve with dipping sauces!
California Cilantro Sauce
- Place all ingredients in a blender. Blend until smooth.
California Avocado Ranch
- Place avocado, yogurt, lemon juice, and milk in a food processor. Process for a minute until mostly smooth.
- Add the rest of the ingredients and continue to process until well-incorporated, scraping down the sides of the bowl as needed.
Sun-Dried Tomato Aioli
- Place all ingredients in a food processor. Process until smooth, about 1–2 minutes, scraping down the sides as needed.
Honey Garlic Sauce
- Melt the butter in a small saucepan over medium heat. Add in minced garlic and sizzle for 1 minute. Pour in soy sauce, honey and rice vinegar and stir. Bring to a light simmer.
- In a small bowl, stir the cornstarch and water together, then pour into the sauce. Continue to heat the sauce and stir until thickened, 1–2 minutes. Remove from heat and sprinkle with sesame seeds.
Serving Suggestion: Serve as an appetizer or a side dish to your favorite protein.
Beverage Pairing: Glass of beer or flavored tea.
*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
