These baked chocolate donuts, made with California Avocados, are fudgy, delicious, gluten-free and non-dairy. They are topped with a creamy and beautifully green California Avocado Frosting.

Chocolate California Avocado Donuts 1 cup almond flour 1/3 cup tapioca 2/3 cup coconut sugar 1/2 cup cacao powder 1/2 tsp. baking soda 1/2 tsp. sea salt 1 ripe, Fresh California Avocado, seeded and peeled 1/3 cup unsweetened almond milk 2 eggs 1/4 cup coconut oil, melted 1 tsp. vanilla extract California Avocado Frosting 1 ripe, Fresh California Avocado, seeded and peeled 1 tsp. lemon juice 1/2 tsp. vanilla extract 5 cups powdered sugar, sifted
  1. Preheat oven to 350 F. Grease donut pan and set aside.
  2. In a blender or food processor, blend together all ingredients for the donuts.
  3. Pour mixture into a piping bag and pipe into the wells of the donut pan, filling about 1/4-inch to the top.
  4. Bake for 10-12 minutes or until donuts are firm, and a toothpick inserted in the center comes out clean. Set aside to cool completely before removing from pan and topping with the frosting.
  5. To make the frosting, in a large bowl, mash the avocado and slowly add in the lemon juice and vanilla extract. Add the powdered sugar 1 cup at a time, mixing until incorporated. For a smoother consistency, follow with a hand-held electric mixer and beat until smooth.
  6. Finish frosting by beating with an electric mixer until light and fluffy.
  7. Add frosting to a piping bag and frost the cooled donuts.

 Serving Suggestion: The batter can be prepared ahead of time and set in the refrigerator covered until ready to bake.  

 Beverage Pairing: Enjoy with a cold glass of milk or your favorite latte. 

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
