Avocado Citrus Salad with Lime Poppy Seed Dressing

This salad is so light and refreshing – even my kids couldn’t get enough of it. And the dressing? … spoon licking good. It’s a perfect side salad to bring along to any summer pot luck or BBQ!

6 cups Mixed greens 2 grapefruit, peeled and sliced horizontally 2 oranges, peeled and sliced horizontally 3 ripe, Fresh California Avocados, seeded, peeled and sliced horizontally As needed Creamy Lime Poppy Seed Dressing (see make-ahead recipe below) Creamy Lime Poppy Seed Dressing 1/4 cup olive oil 1/2 cup lime juice 1/4 cup sugar 2 Tbsp. diced onion 3 Tbsp. low-fat mayonnaise 1 Tbsp. white wine vinegar 1/4 tsp. salt 3/4 Tbsp. poppy seeds
  1. Divide the mixed greens among plates.
  2. Top each plate with slices of grapefruit, oranges and avocado. Drizzle with the Creamy Lime Poppy Seed Dressing.
  3. Enjoy.

Creamy Lime Poppy Seed Dressing Instructions

  1. Place all the ingredients except for the poppy seeds into a blender, blend for 30 seconds. Add the poppy seeds and pulse two times. Store in an air-tight container in the refrigerator until ready to use.
