This salad is so light and refreshing – even my kids couldn’t get enough of it. And the dressing? … spoon licking good. It’s a perfect side salad to bring along to any summer pot luck or BBQ!
Avocado Citrus Salad with Lime Poppy Seed Dressing
|2||grapefruit, peeled and sliced horizontally|
|2||oranges, peeled and sliced horizontally|
|3||ripe, Fresh California Avocados, seeded, peeled and sliced horizontally|
|As needed||Creamy Lime Poppy Seed Dressing (see make-ahead recipe below)|

|1||Tbsp.||white wine vinegar|
As with all fruits and vegetables, wash avocados before cutting. Check out our tips for how to choose and use California Avocados
- Divide the mixed greens among plates.
- Top each plate with slices of grapefruit, oranges and avocado. Drizzle with the Creamy Lime Poppy Seed Dressing.
Creamy Lime Poppy Seed Dressing Instructions
- Place all the ingredients except for the poppy seeds into a blender, blend for 30 seconds. Add the poppy seeds and pulse two times. Store in an air-tight container in the refrigerator until ready to use.
Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
