Avocado Citrus Salad with Lime Poppy Seed Dressing
Ingredients
Serves: 4| 6 | cups | Mixed greens |
| 2 | grapefruit, peeled and sliced horizontally | |
| 2 | oranges, peeled and sliced horizontally | |
| 3 | ripe, Fresh California Avocados, seeded, peeled and sliced horizontally | |
| As needed | Creamy Lime Poppy Seed Dressing (see make-ahead recipe below) | |
| Creamy Lime Poppy Seed Dressing | ||
| 1/4 | cup | olive oil |
| 1/2 | cup | lime juice |
| 1/4 | cup | sugar |
| 2 | Tbsp. | diced onion |
| 3 | Tbsp. | low-fat mayonnaise |
| 1 | Tbsp. | white wine vinegar |
| 1/4 | tsp. | salt |
| 3/4 | Tbsp. | poppy seeds |

Instructions
- Divide the mixed greens among plates.
- Top each plate with slices of grapefruit, oranges and avocado. Drizzle with the Creamy Lime Poppy Seed Dressing.
- Enjoy.
Creamy Lime Poppy Seed Dressing Instructions
- Place all the ingredients except for the poppy seeds into a blender, blend for 30 seconds. Add the poppy seeds and pulse two times. Store in an air-tight container in the refrigerator until ready to use.
Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
