Fudgy avocado brownies that have been lightened up with creamy California Avocado in place of butter or shortening. They are topped with a sweet, aromatic California Avocado matcha glaze for a bite that hits all the senses.

California Avocado Brownies with California Avocado Matcha Glaze 1 ripe, Fresh California Avocado, peeled and seeded 3/4 cup granulated sugar 2 eggs 1 tsp. vanilla extract 4 oz. dark chocolate, melted and cooled 1/2 cup all-purpose flour 3/4 cup cocoa powder 1/2 tsp. kosher salt California Avocado Matcha Glaze (see make-ahead recipe below) California Avocado Matcha Glaze 1/2 ripe, Fresh California Avocado, peeled and seeded 1 Tbsp. honey 1 tsp. matcha powder 1 cup powdered sugar

California Avocado Brownies with California Avocado Matcha Glaze

  1. Preheat oven to 350 F.
  2. Line an 8×8 sheet with parchment paper and set aside.
  3. In a food processor add 1 avocado and blend until creamy and smooth. Once smooth, add granulated sugar, eggs, vanilla extract and melted chocolate into the processor until combined.
  4. In a medium bowl whisk together flour, cocoa powder and salt. Add the chocolate avocado mixture to the flour and fold until just combined, do not over mix.
  5. Evenly spread the batter mixture into the prepared pan and bake for 30 minutes or until the center is set. Remove from oven, let cool and cut.

California Avocado Matcha Glaze

  1. In a food processor blend avocado until smooth.
  2. Add in honey, matcha powder and powdered sugar and blend until smooth.
  3. Transfer to a sandwich-sized plastic bag, snip the end and drizzle the matcha glaze over the tops of cooled California Avocado Brownies.

Serving Suggestion: Store leftover brownies in the refrigerator for up to 1 week.

Beverage Pairing: Pair with a glass of almond milk.

*Large avocados are recommended for this recipe. A large avocado averages about 8 ounces. If using smaller or larger size avocados adjust the quantity accordingly.
